Roasted Soybean or Soy Nuts
Like corn nuts but this snack has some actual food value with 38 g of protein
Stir one cup of soybeans into about 4 cups of cool water
Let sit overnight- the beans with swell, so make sure they stay covered with water
Preheat oven to 350 degrees
Line a shallow pan with foil.
Drain the beans and dry on paper towel to remove extra water.
Stir soaked beans with
1 tablespoon of oil, peanut or olive work well
1/2 teaspoon of salt
Spices, spice blends , powdered cheeses for seasoning
Mix beans with oil and salt
Spread in in a single layer on the prepared pan,
sprinkle on seasonings
Bake for 15 minutes.
Stir beans and return to a single layer, bake again for 5 minutes.
Keep repeating the process until the beans are crunchy and well roasted. Can take anywhere from 30 minutes to 45 depending on how moist the beans are. Just keep checking on them so they don't burn. They should be brown and crunchy, not chewy.
